Shall we be able to loop our own sirens?

Or at least pick some of sirens we want to have in our vehicles from a large variety of sirens developers will hopefully prepare.

I'm not 100% sure my thoughts are I'd assume its just a off/on toggle for siren

I don't believe you can "pick" sirens, (like picking horns for cars in GTA V), but there are different audible siren choices that go along with the default siren sound. Some vehicles have access to different options than others.

@MarineYes, it is a toggle, and you can toggle between ONLY SIREN, ONLY LIGHTS, or BOTH.
