It's usually just one mod, but there's different kinds. You can watch some videos and decide which one you should get and installation is usually pretty easy. Altis life is the one I recommend the most and if you happen to get it installed you should totally play on the Asylum servers.

Gangs will be player created. You may be able to access a menu for your gang and assign certain ranks to different members. As far as jobs go, you can rob players and banks, grow your own drugs and sell them to other gangs or even steal them from a rival of yours.
